Make Malai Ghevar At Home : As soon as the festival of Rakhi arrives, the one sweet that wins everyone’s heart is the delicious and creamy Ghevar. This crispy sweet is mostly available in the month of Sawan. Sweet shops are filled with Ghevar and people happily take boxes full of it home. But nowadays, many people think twice before buying sweets from the market. Due to health and adulteration fears, people prefer to make sweets at home. So why not make Ghevar at home this time on Rakshabandhan? Yes, you can easily surprise your brother by making delicious Malai Ghevar in your kitchen. Let’s know how to make Ghevar at home.
Ingredients:
Refined flour – 1 cup
Ice cubes – 4 to 5
Milk – 1 cup
Curd – 2 tbsp
Ghee – for frying
Sugar – 1 cup
Water – ½ cup
Cardamom powder – ½ tsp
Mawa (khoya) – 100 gms
Saffron strands – a few
Cashews, almonds, pistachios – for garnishing

Method: 1. To make Ghevar, first prepare the syrup as the fried Ghevar has to be dipped in it immediately.
2. To make syrup, add sugar, water and cardamom powder in a pan. Cook it till one string syrup is formed and then keep it aside.
3. Now add ice cubes and ghee in a blender. Mix well. You will see that the ghee has separated from the water. Keep the water of this mix aside as it will be used in the solution.
4. Now add flour, semolina, baking powder, curd and cold water from the blender in a mixing bowl.
Mix it until it becomes smooth. The batter should neither be too thick nor too thin.
5. After this, heat ghee in a deep pan or kadhai and place the ghevar mould in it. Using a bottle with a hole in the lid, slowly pour the batter into the mould. Spread the batter in a ribbon-like shape and make a hole in the centre.
6. Fry till golden brown, then take it out and drain the extra ghee. Dip this Ghevar in the prepared syrup and then place it on a plate. Spread mawa on top, garnish with chopped nuts and saffron.
